- Set the oven to 200 °C (moderately high heat) and allow it to warm up.
- On a non-stick rectangular baking tray measuring approximately 30 x 40 cm, arrange the pumpkin cubes with some space between each piece. Peel and crush the garlic cloves, then add them to the baking tray. Scatter the rosemary leaves over everything. Drizzle with olive oil and season with salt and pepper according to your preference.

For noodles and gravy
Components
- 4 cups of tea-sized snail-shaped noodles
- One egg
- 3 teacups of milk
- 3⁄4 cup of finely shredded Parmesan cheese
- 1 tablespoon of almond-flavored liqueur (amaretto) (optional)
- nutmeg grated just in time
- Add salt and ground pepper gradually, adjusting to your preference.
Ready state
- After 10 minutes, place the pumpkin in the oven. Meanwhile, bring a large pan with 3 liters of water and 2 tablespoons of salt to a boil over high heat. Once boiling, cook for 15 minutes, then add the noodles and cook for half the time indicated on the package. In this recipe, the noodles were cooked for 4.5 minutes. Turn off the heat, drain the water, and return the noodles to the pan.
- As the noodles are cooking, prepare the sauce in a bowl by combining the egg, milk, and 1/2 cup (tea) of Parmesan. Incorporate the almond liqueur, mix thoroughly, and season with nutmeg, salt, and pepper according to your preference.
- Combine the sauce with the drained noodles and add the roasted pumpkin pieces. Set aside a few pieces for garnish if desired.
- Place the noodles into a large baking dish or six individual ovenproof dishes and garnish with pumpkin cubes.
- Sprinkle the remaining Parmesan cheese, place the pots on a baking tray (if using individual dishes), and put them in the preheated oven at 180°C (moderate heat) to complete cooking and browning. Take out of the oven and serve right away.
