Components
- 3 cups (tea) of prepared rice
- One onion
- Half a carrot
- 1/4 cup of finely chopped parsley and chives
- 2 tablespoons of extra virgin olive oil
- Three eggs
- 1/2 cup of finely shredded Parmesan cheese
- 4 tablespoons of cornstarch
- Add salt and ground pepper gradually to achieve the desired flavor.
- oil to enhance the flavor of the cookies
Setup mode
- Peel the onion, cut it in half, and slice it into rings that are not too thin.
- Place a medium skillet (ideally non-stick) over low heat. Pour in one tablespoon of olive oil and add the onion. Sprinkle with a pinch of salt and cook for approximately 15 minutes, stirring occasionally, until it turns golden brown.
- In the meantime, get the other ingredients ready: wash, peel, and grate the carrot using the coarse side of the grater; wash and dry the parsley and the spring onion. Finely chop the parsley and slice the spring onion into medium-sized pieces.
- Place the golden onions in a large bowl, add the cooked rice, and stir together.
- Raise the heat to medium, add an additional drizzle of olive oil to the water, and include the carrot. Sauté for approximately 2 minutes, then add the parsley and spring onions. Turn off the heat, add the rice, and stir thoroughly.
- Incorporate the grated cheese, adjust the flavor with salt and ground pepper. Then, add the eggs and thoroughly blend in the corn starch at the end.
- Use a paper towel to clean the frying pan and heat it over medium to low heat. Once warm, add water and oil to cover the entire bottom. Spoon two portions of the rice mixture into the pan and gently press them down with the back of the spoon to form a hamburger shape. Cook one or two dumplings at a time, ensuring there is space between them to prevent sticking.
- Cook for approximately 2 minutes, then flip with a spatula to caramelize the other side evenly. Move the cooked dumplings to a serving dish and continue with the remaining rice mixture, adding more oil to the skillet if needed. Serve the dumplings while still warm.
