Components
- 100 g of spaghetti pasta (or another type of long, firm pasta)
- lemon peels from 1 lemon
- 1 teaspoon of lemon extract
- 3 tablespoons of finely grated Parmesan cheese
- Two tablespoons of olive oil Walk
- Add salt and ground pepper as desired.
- lemon zest as desired for serving
Setup phase
- Use a medium-sized pot with 2 liters of water and place it over high heat. Once it reaches a boil, stir in 2 teaspoons of salt, add the pasta, and cook according to the time specified on the package or until it is al dente. While the pasta is cooking, start preparing the sauce.
- In a big bowl, combine the lemon zest and juice, olive oil, and grated Parmesan. Add chili pepper to taste, then mix thoroughly with a fork or a small whisk to break down the Parmesan and blend the ingredients into an emulsion.
- After cooking, reserve half a cup of the cooking water and drain the noodles using a sieve. While still hot, place the noodles into the bowl with lemon sauce and stir thoroughly.
- Slowly incorporate the reserved baking water, stirring gently with each addition to keep the sauce smooth and creamy. Be careful not to add all the water at once to avoid thinning the sauce. Serve immediately, garnished with extra lemon zest to your preference. You may also top it with basil leaves, crushed oak biscuit, bread crumbs, or bacon powder.
